All year round

  • Idar-Oberstein "Spießbraten"

Grilled over an open beech-wood fire, with onions, potato salad and bread

THE dish of the region. Pork neck marinated overnight in lots of raw onion, salt and pepper, then slowly turned over an open beech-wood fire until smoky and juicy. No sauce, nothing fancy. The local story goes that gem cutters from Idar-Oberstein who emigrated to Brazil brought the churrasco idea back home in the 1800s. With home-made potato salad and farmhouse bread.

  • Hunsrück "Dippekuchen" potato bake

Baked for three hours in a cast-iron pot, with apple sauce

"Dippe" means pot in the local dialect. Grated raw potatoes mixed with onion, egg, bacon and smoked sausage, baked for about three hours in a cast-iron pot until the edges are dark and crunchy. Traditionally eaten with apple sauce – sweet and savoury, trust us. Only while the pot lasts!
