The oven
Built brick by brick in Naples.
Lucio Ferrante grew up in Caserta, near Naples, between flour sacks and his uncle's oven. In 2019 he fired up his own in Bad Kreuznach: a dome of volcanic clay, built by hand and fed with beechwood from the nearby Soonwald forest.
The dough rests for 48 hours before it goes in. That makes it light and easy to digest, with an airy crust and the dark blistered spots Neapolitans call “leopard spots.”
“A good oven forgives nothing. That's why we make everything ourselves.”
